The Spicy Olive’s Waldorf Salad

Ingredients
  • 1/4cup The Spicy Olive’s single varietal extra virgin olive oilor use Herbs de Provence or our Persian Lime olive oil for extra flavor
  • 1/4cup The Spicy Olive’s Gravenstein Apple balsamic
  • 1 Granny Smith Applecored and thinly sliced
  • 1cup red seedless grapeshalved
  • 1 Red Delicious applecored and sliced
  • 2stalks celerythinly sliced
  • 1/4cup walnuts or pecanstoasted and coarsely chopped
  • 4leaves Bibb lettucewashed and patted dry
  • 1/4cup Raisins and or dried Cranberries
  • 1/4cup dried dateschopped (optional but a delicious addition)
  • 1/4cup Gorgonzola Cheeseoptional
Instructions
  1. Place apples, celery, grapes, nuts, raisins or dried cranberries and or dates in a salad bowl.
  2. Drizzle the olive oil of your choice (my favorite is the Persian Lime with the Gravenstein Apple)and the Gravenstein Apple balsamic vinegar over the salad and toss to coat. Add Gorgonzola cheese, if desired and toss.
  3. Place 1 Bibb lettuce leave on each salad plate and top with a scoop of the Waldorf Salad. Serve and enjoy!
