Place pork tenderloins in a zip lock bag. Measure out and pour olive oil and balsamic vinegar over pork tenderloin with minced garlic. Marinate in refrigerator overnight for maximum flavor or at least for 4 hours.
Remove tenderloins from marinade and place on a baking sheet. Bake in 400°F oven for 25-35 minutes, or grill, until meat thermometer reaches 160-165°F.
Let meat rest for 10 to 15 minutes, then slice into thin slices on the diagonal.
Drizzle with Blackberry Ginger balsamic before serving.
