What could be better than Orange and Cranberries together in an Oatmeal cookie? It is like an Orange Cranberry Scone but less crumbly and it is made with  healthy olive oil in it instead of butter!

  • 1/2 cup The Spicy Olive's Butter infused olive oil
  • 1/2 cup The Spicy Olive's Blood Orange fused olive oil
  • 1 cup brown Sugar
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp Salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 4 cups old fashioned rolled oats not instant oats
  • 1 cup Dried Cranberries

Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease cookie sheets.
  3. In a large bowl, mix Butter Infused Olive Oil, Blood Orange Olive Oil, brown sugar, eggs, and vanilla.
  4. Combine flour, baking soda,salt, cinnamon, and nutmeg; stir into the sugar Olive Oil mixture. Mix in the oats and cranberries last.
  5. Scoop a spoonful (rounded) onto the prepared cookie sheet.
  6. Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5-6 minutes and enjoy.
