The Spicy Olive’s Roasted Red Pepper Hummus

An easy but delicious snack, quick to prepare and healthy when served with vegetable crudite, like celery sticks, carrots, cucumbers and red peppers

Roasted Red Pepper Hummus
Hummus is a dip made with chick peas & olive oil. You can make many different flavors of hummus by using different flavored olive oils. If you like spicy, you could flavor the hummus with Harissa olive oil, Milanese Gremolata would make a delicious lemon, garlic hummus. The Tuscan Herb olive oil would make a truly Tuscan treat.

  • 1 16 ounce can of garbanzo beans or chickpeas
  • 1/4 cup liquid from can od chickpeas
  • 3-5 Tbsp lemon juice depending on taste
  • 1 1/2 Tbsp tahini-I subsititue The SPicy Olive's Roasted Sesame oil
  • 1 jar Roasted Red peppers
  • 1/2 teaspoon Salt
  • 2 Tbsp The Spicy Olive's olive oil play with different flavored oils like Harissa, Tuscan Herb or a Robust single varietal olive oil for more health benefits

Instructions
  1. Drain chickpeas and set aside liquid from can.
  2. Combine remaining ingredients in blender or food processor.
  3. Add 1/4 cup of liquid from chickpeas.
  4. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Place in serving bowl, and create a shallow well in the center of the hummus. Add (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
  5. Serve with pita chips (fresh and warm or toasted) or with fresh veggies like red pepper strips, carrots and celery. Enjoy!!
